Cayao is shaped by the vision of Chef Richard Sandoval, founder of Richard Sandoval Hospitality and a global leader in modern Latin and Nikkei cuisine. With more than 60 restaurant concepts across five continents, he is known for introducing Latin culinary traditions to the world through a made-from-scratch philosophy and globally inspired techniques.
At this oceanfront concept, Chef Sandoval presents a sophisticated interpretation of Nikkei—thoughtfully composed, globally inspired, and deeply rooted in technique. His creative direction also extends to Coraluz, another signature restaurant within the resort.

Executive Chef, Four Seasons Resort Cabo San Lucas at Cabo Del Sol
As Executive Chef of the resort, Miguel Baltazar supports the culinary expression of Cayao while overseeing the broader gastronomic direction of the property. Raised in Morelia, Michoacán, his early connection to food was formed through family traditions and time spent in local markets. He later refined his craft at the Culinary Institute of Mexico and the Lycée Hôtelière Paul Augier in France.
His work prioritizes sustainability, seasonality, and authenticity. As an ambassador for Pesca Con Futuro, he ensures the resort’s seafood program reflects responsible sourcing and regional integrity. His leadership brings depth and cohesion to the resort’s dining experience, including Cayao.
